Pumpkin or pumpkin or cucurbita (Cucurbita maxima) is an annual herbaceous plant cultivated for its fruit, flowers and seeds.
It is native to South America, where it grows wild in the Southern Cone.

It was introduced at an early age in Europe (late sixteenth century), the ease of its hybridization made it confused with the pumpkins of pilgrims (Lagenaria siceraria).
Today it is grown on large areas in temperate regions around the world.
In some countries the flower is eaten as a vegetable; the fruit can be stored in suitable conditions of light, temperature and humidity for up to 6 months in good condition.
It is rich in β-carotene and glucose. The seeds are known as pumpkin seeds and are attributed medicinal properties in natural medicine.
The seeds are rich in minerals, especially zinc, which is why the World Health Organization recommends their daily consumption. They are a good source of vitamin K.
Pumpkin is used in Day of the Dead rituals in several American countries (United States, Mexico, Guatemala, etc.).

  • 1 kg of pumpkin (organic)
  • 2 carrots
  • 3 potatoes
  • 1 clove of garlic
  • 1 red onion
  • 1 cube Knor chicken
  • salt pepper
  • thyme, laurel
  • 2-3 tablespoons of sour cream
  • 40 g of foie gras
  • 2 slices of gingerbread

Servings: 6

Preparation time: less than 60 minutes

RECIPE PREPARATION Pumpkin soup with foie gras and gingerbread:

The zucchini is emptied of seeds and ribs and cut into medium squares.

Peel the potatoes, onion and garlic.

Put the vegetables with the Knorr cube, the herbs, salt and pepper to boil in a miracle pot in a large amount of water for 20-30 minutes.

Strain everything, keeping the water in which it boiled.

Remove the bay leaf and mix the vegetables, adding water gradually until a cream is obtained.

Add sour cream. Mix again.

Check for salt and pepper.

Fry the gingerbread slices in a little butter. Cut them into cubes.

Serve hot with diced foie gras and gingerbread croutons.
