Separate the egg whites from the yolks, grate the chocolate, soak the gelatin and whip the whipped cream. In a bowl put the butter together with the household chocolate and put it on a bain marie, mix well until the chocolate melts. Then add the gelatin, mix well and remove from the heat. Beat the egg whites together with the sugar until they become hard like meringues. Then add the whipped cream and pour a little melted chocolate, stirring constantly. After it has been homogenized, pour it into a bowl and put it in the fridge, where it is left to harden for at least 2 hours.

Tangerine foam

Peel a squash, grate it and squeeze the juice
Mix with sour cream and put in the whipped cream siphon then add the N2O patterns
Stir well and leave to cool for 1.5-2 hours.

If you have no problems with your figure or if you make this mousse for children, you can quietly put whole milk in it. The vegetarian version can be prepared just as easily with soy milk or rice or almond milk. And, if you want it to be even more delicious, sprinkle over the mousse and a teaspoon of grated dark chocolate, and the combination of chocolate and banana will be one you can never fail.

2 tablespoons low-fat milk
1 tablespoon raw honey

Put the gelatin in a cup of cold water and let it soften for about 10 minutes.

Mix the egg yolks with the milk, in a pot, over low heat. Take the pot off the heat, remove the gelatin from the water and place it over the yolk composition. Stir until the gelatin dissolves.

In a bowl, place the chopped chocolate, over which pour the prepared composition and mix well until a fine cream is formed.

Beat the cream until you get a strong cream, which you incorporate into the mousse composition.

Raspberry mousse

This sweet and sour dessert is perfect for hot summer days. And know that it is not complicated at all. The hardest part is waiting, because the mousse has to stay in the fridge for about 12 hours. In our house he was successful from small to large.

Ingredient:

  • 500g raspberries
  • 2 egg whites
  • 50g stevia sweetener (Green Sugar I used)
  • 3-4 sheets of gelatin
  • 150g mascarpone
  • 30g honey
  • a few pieces of dark chocolate (for serving & # 8211 optional)

Method of preparation:

First, I put the gelatin sheets to soak in a bowl of cold water. I had some organic gelatin sheets that I bought a long time ago in Luxembourg. Gelatin can be found in hypermarkets or you can replace it with agar-agar (it is generally found in organic stores or in the department stores of hypermarkets). About 5g of agar-agar powder should be enough for this recipe.

Then I took care of the raspberries. I washed it well, dried it in kitchen paper and blended it. Then I passed it through a sieve to remove the seeds. I put the obtained juice in a pot, over low heat.

I heated the raspberry juice without bringing it to the boil. I took the pot off the heat, added the drained gelatin and the sweetener. I stirred until the gelatin and sweetener dissolved. I let the mixture cool completely.

I whipped the egg whites (you need to get a firm foam).

Separately, in a large bowl, using the mixer, I mixed the mascarpone with honey and gradually added, at low speed, the raspberry juice (cold). Then, I incorporated, with slow and circular movements, from top to bottom, the egg white foam. The composition obtained is quite liquid, but it will harden in the refrigerator.

You can serve the mousse in glasses, in small jars or on a plate if you have the right shapes to put the composition in. I distributed it both in airtight jars and in kitchen rings (usually used to decorate plates). If you have kitchen rings, one side should be covered with cling film. Otherwise, you run the risk of the composition leaking and running out of mousse.

If you use kitchen rings, before serving the mousse, you must peel it off the walls of the rings, lightly, with a knife. If you intend to distribute the composition in silicone forms, I do not guarantee that you will be able to remove it in the desired shape, precisely because the texture of the mousse is very fine and airy.

You must leave the mousse in the fridge overnight or for 12 hours. Its texture will be fine and airy, and the taste sweet-sour. When we served it, we added a few pieces of dark chocolate.
