Chicken marinated with chimichurri

This chicken marinated with chimichurri has been on my favorites list for about 2-3 years.

It is so tasty and tender but also very fragrant, that I don't think you haven't made it the same lately. I could talk a lot and well about this sauce with which I marinated the meat and I think there is nothing I would not associate it with. From vegetables to meat, fish and even pasta. It is generally used for grilled meat, but along the way I also associated it with bean hummus or in chicken salad.

It is a cold sauce, made from 100% vegetable ingredients, also suitable for those who are vegetarians.

It can be made and stored in the refrigerator in a tightly closed jar for up to a month, keeping the same characteristics and properties.

Ingredient:

Ingredients for chimichurri:

  • 3 parsley bindings
  • 1 tablespoon dried oregano tip
  • 1 clove of garlic
  • 1/2 yellow onion
  • 150 ml extra virgin olive oil
  • 1/2 red hot pepper
  • 40-50 ml of white wine vinegar, depending on taste
  • 1/2 teaspoon hot pepper flakes
  • Salt to taste

Preparation for chimichurri:

Peel the onion, garlic and finely chop them.

Remove the seeds from the hot pepper and chop finely.

It is very important that the ingredients are cut from the knife and the knife is well sharpened. Do not put them on the grater because the taste will be distorted!

Put in a large bowl of oregano with vinegar to hydrate.

Add the rest of the ingredients and mix well. It can be used immediately after homogenization, but it is much better after a few hours, when the tastes combine.

Preparation for chickens:


Using a skewer, prick both the chest and the thighs and add salt.

Grease with the chimichurri sauce both inside and out and put it in a bowl with your chest down and cover with foil.


Let cool overnight for at least 3 hours at room temperature.

We put the chicken on a special form for baking chicken or on a beer bottle that we previously filled with water, then in a bowl with high walls of at least 2 fingers and put in the oven for 65-70 minutes or until browns.


Choice of pickling spices

Spices and herbs enrich the marinades with bright flavors and make the taste of original and memorable chicken dishes. Which of them to choose to cook a really excellent chicken ??

  • Black pepper and hot pepper. Black pepper is present in all marinade recipes, and chili is used only in cases where you need to add extra spiciness to the chicken.
  • Spicy herbs. Rosemary, marjoram, thyme, basil and sage are the most commonly used for marinades. You can only add one of these plants to give a bright accent to the plate and you can experiment by creating original combinations of spicy additives.
  • curry. This spice is a combination of nutmeg, mustard, hot pepper, coriander and cumin.
  • turmeric. This additive will give the chicken not only the emphasis on Indian cuisine, but also paint the chicken skin in a delicate golden color, which will make it even more appetizing.
  • ginger. This wonderful root is widely used in Asian cuisine and gives the marinade a spicy oriental aroma.

As well you can just sprinkle with its juice or a small lemon. I think it was even better for the taste, because it still felt a little bitter in the places where the lime slices were. The bag is knotted at the end and refrigerated in a large bowl (with the bag) and marinated for at least 6 hours, or overnight.
After this time, put baking paper in a tray (just in the houses), although no juice has been drained when baking, and cook the chicken for about 50-60 minutes at 220 degrees.
Below you can see the bag with the contents before and after it has been cooked. It left a lot of juice that forms a necessary good sauce and when I heated what was left uneaten.

The bag will swell a lot during baking. After you stop the fire you will not be able to remove it. Leave the oven with the door open for 5 minutes and the bag will deflate on its own. This is what the chicken looks like after I split the bag to serve at the table.

It was tasty with mashed potatoes, pickles and hot peppers for those who want more spicy. It is fragile and good.

  • Four tablespoons of olive oil

Kefir

This preparation is made by me according to Teo's recipe and I consider it a shame to misinterpret its description, for which reason I will give you the recipe with copy paste and my pictures.

The recipe for this caprese is more than simple, with only 3 main ingredients: plum tomatoes, mozzarella and fresh basil leaves. It can be seasoned with olive oil, salt and pepper, and some chefs even use balsamic vinegar. This is the recipe from which I started looking for something good for dinner and as I must admit that we are hardened carnivores, I introduced in the list of ingredients the chicken breast, onion and garlic and for a color stain: hot pepper paste, hard spicy! Baked Caprese chicken is one of the most successful chicken recipes, I was told by the eaters, so get your hands on it and try it as soon as possible!

ingredients:

  • 1 chicken breast
  • 4 plum tomatoes, cut into slices about 1 cm thick
  • 150 gr mozzarella, cut into slices about 1/2 cm thick
  • 4-5 strands of fresh basil
  • 4 cloves of garlic
  • a small onion, finely chopped
  • a grated spoonful of hot pepper paste
  • 5 tablespoons olive oil
  • salt pepper

Cut the chicken breast into cubes. Separately, prepare a marinade of 3 tablespoons of olive oil, onion, finely chopped garlic, hot pepper paste, salt and pepper to taste. Put the chicken in a zippered bag, pour over the marinade and mix well, so that all the chicken pieces are well covered with the marinade. Keep the chicken in the fridge for at least 2 hours.

Then fry the chicken, with the sauce in which it was marinated, in a Teflon tray, without added fat, because the marinade is based on oil. After the chicken is browned, put 2 tablespoons of oil in a small tray and start to build: a layer of tomatoes, then a layer of mozzarella, basil leaves, 1/2 of the amount of chicken and then another layer of each, until the ingredients are exhausted.

It is important that the last layer is mozzarella and basil, over the meat, to brown nicely. Put the tray in the oven for about 30 minutes, or until the mozzarella is well browned.

To be honest, it has nothing to dislike, it is a very fragrant food, its secret being the quality ingredients. Use only fresh basil for this recipe, the dry one will not give the food the desired flavor. What I wanted to tell you: never be afraid to change a recipe, omit ingredients you don't like, include your favorite ingredients, combine recipes and improvise! Nothing will bring more joy to the kitchen than an improvised recipe, but it turned out very well.
