After the dough has risen, put a little flour on the work table, knead it a little more and then break it in two and put it in 2 smaller pots (I put in 2 1.5 liter stainless steel pots) and put them in oven on low heat for half an hour and then on low heat to brown nicely.

After the bread is well baked, take it out of the pots and let it cool. After it has cooled, cut the lid on top and dig in a circle with a diameter of about 1 cm, and less if you want, and put the soup in the bread. It will enter around 3-4 poles because the core will absorb from the juice.

How to prepare smoked meat beans

I worked directly in a pot of approx. 5 L. I cut the onion into small pieces and hardened it a little in the 2 tablespoons of oil. Then I added sliced ​​or crushed garlic or dehydrated garlic flakes.

Boil smoked beans in a pressure cooker (kukta, multicooker) or in a classic pot

After adding the bay leaves, I closed the pressure cooker. I boiled the beans for 60 minutes in a kuktă or multicooker with pressure (calculated since it enters the boiling regime).

If you use a regular pot then boil everything until the beans soften and the smoke becomes soft. We recommend a slow fire and the use of a lid. If necessary, add more water along the way. Boiling will take over 1 hour 30 minutes in this case.

I opened the kukta (pressure cooker) and tasted it. Everything is boiled and salted enough. If you want a thicker smoked bean dish then you can cook everything for another 30 minutes without a lid, over medium heat.

Serving smoked beans

I transferred everything to a large bowl and decorated the food with green parsley and / or chopped onion. The smoked meat is tender and delicious and the beans are well cooked, some being broken (exploded). Boiled kaiser can only be eaten with a fork, without a knife. The rind is soft and fine.

As I said above, you just have to mix a little with the polish in the bowl to see how the juice thickens and turns into a delicious sauce. Yummy! Beans with ribs or kaiser are served hot. We like it with red onion scales rubbed with salt and sprinkled with vinegar. What is left is put in the fridge and can be reheated (in portions) in the following days. It is not wrong to make a larger amount of smoked beans and freeze it.

Bean soup with smoked ciolan, ribs or sausages I do it especially in winter, when the cold comes. It is a consistent food that takes the place of soup and the second course. After her we eat pancakes, doughnuts or cirighele. However, no matter how much protein it contains, you don't need anything else. I say this because I put a 1.5 kg shank per 500 g of dried, old beans. Or 1 kg of ribs or smoked sausages. So I don't make cranberry juice.

Put onions, carrots, bleach (roots) and sometimes a small pepper (if it's summer). The gorgeous color is given by paprika (paprika) and the aroma of the soup is intensified by cumin (which also helps digestion). In our house, no laurel or broth is put in the bean soup, only in the barn (recipe here).

Smoked ciolan (raw-smoked, not preferred!) Is the smoke I choose most of the time for this bean soup.

I leave you the recipe for a healthy pot of beans with smoked beans, ribs or sausages (approx. 5-6 L). This soup can be stored in the refrigerator for several days, and can be reheated later in portions.

  • 1 fine red pepper (kapia) or donut
  • 1 tablespoon cumin seeds
  • 3 tablespoons quality paprika
  • salt (depending on how salty the smoke is)
  • sour sour cream (min. 20%)
  • 2-3 sliced ​​red onions
  • a little salt, 1 teaspoon of vinegar, a few drops of oil
  • fresh tarragon or vinegar

  • 600 grams of beans, cleaned, washed and soaked in water overnight

Remove the foam and degrease the stew. When both the beans and the meat are almost cooked, add the diced vegetables:

The taste of salt fits & # 8211 I didn't add salt from the beginning, the smoked meat being salty too.

1. Fry the diced bacon a little (picture 1).

2. Drain some of the fat collected in the bowl after frying the bacon and add the remaining onion, finely chopped (picture 2).

3. Cook the onion a little, so that it becomes glassy and develops its taste, add the paprika and quench immediately with the broth and a few tablespoons of the juice from the bean pot (picture 3).

4. Add this composition to the bean pot: Continue cooking until both the meat and the beans are well done, adjust the taste with salt, pepper, add the crushed garlic (picture 4).

Eat with pleasure with red onions and hot peppers (our case) or whatever you like.

Method of preparation

The beans are chosen by foreign bodies and washed and boiled in cold water, changing the water twice (with boiled water), then adding the smoked ribs (whole).

The vegetables are cleaned, washed, cut into small pieces (tomatoes in quarters) and all added to the bean bowl when it is half cooked. Dilute the tomato paste with the soup and add it to the bean bowl, mixing the composition. Boil for another 10 to 15 minutes, add the vinegar and control the taste of salt.

The ribs are deboned, cut into cubes and added to the soup bowl. Serve with finely chopped greens.

Remove the bread from the molds, cut the lids on top, dig out the core and then put it in the oven for another 5 minutes, to dry it inside. Serve the bean soup in bread bowls with red water onions or hot peppers.

How do we prepare smoked bean soup?
